unfortunately this section of the documentation is outdated and needs to be fixed (I am taking a note about it).
What you can use, instead, is the script that we provide to generate the values.yaml file in the Renku repository under scripts/generate-values, which will give you the option of selecting an external Gitlab for your Renku deployment.
